Hudson Valley is calling you. We're in Rhinebeck, NY and a new spa/hotel just opened here a few weeks ago, Mirbeau: https://rhinebeck.mirbeau.com/mirbeau-story/ I haven't been a guest there, but it's LOVELY! Since it's right in the center of town, you could take the train up (Amtrak from Penn Station to Rhinecliff), take a 5 minute cab ride (literally 5 minutes) into town and have everything right there! You could stay at Mirbeau, visit the spa, take a fitness class, and enjoy all Rhinebeck has to offer; an independent bookstore, independent movie theater, sweet little candy store (partly owned by Paul Rudd, who sometimes makes an appearance), GREAT restaurants, sweet little coffee shop, nice bars, etc. If you're looking for restaurant options in Rhinebeck: - Terrapin (american farm to table) and Cinnamon (indian) are our favorites for a really nice dinner out. - For brunch, a coffee stop, and/or afternoon treat, Bread Alone. - For lunch, THE best falafel and sabich EVER, Aba's, owned by a super amazing and progressive couple. If you drive, a nice place to stop on the way up or way back down is Dia Beacon; Great museum right on the Hudson.
