I highly recommend Dr. Mark Weinstein (http://www.heallergies.com/) Even though he's in Jersey City it's convenient on the PATH train (1st stop) and he's the only doctor in the immediate area doing OIT outside of clinical trials (see oit101.org) I know he even has a patient who flies over from the UK to do this life-changing (and saving!) treatment. I think he takes most insurances.

We did OIT for peanuts, and now tree nuts with Dr. Mark Weinstein of Hudson Essex Allergy, in Jersey City, with my now 6 year old. It's not a terrible commute as it's the first stop on the PATH train, and he does Saturday morning hours for updosing appointments. We LOVE Dr. Weinstein and his staff and we have a couple friends who have been through the process with them as well.
