- "egg muffins". It's basically eggs veggies/meat/cheese or whatever baked in muffin tins. Pinterest has tons of recipes and you can make a bunch all at once and use throughout the week.

- Steel cut oatmeal

- whole grain slice of bread heated in a toaster oven with feta or queso blanco on top

- cheesy corn muffins

- arepas (the easiest are the ones you can buy in the supermarket and make like pancakes with cheese - it's a red package P.A.N. brand it says sweet corn mix and it's not very sweet, but you can also make a batch of regular arepas, cook them, freeze them, and just pop them in the toaster oven for a few minutes - here's a sample recipe <http://cooking.nytimes.com/recipes/1015180-colombian-corn-and-cheese-arepas> I mix it up by adding yogurt and different kinds of cheese and I usually just do them in the stove top. will have to try this method)

- crepes (rolled with whatever you want to put in them, I like a little bit of jam & grated cheese)

- baguette with butter, avocado & country ham (idea stolen from wichcraft)
